checking in on the jar periodically so it doesn't overferment, picking the right time to strain it carefully, drinking it and savouring its unconventional sour taste. loving it even if others think it's something that's hard to love. taking care of your scoby every single day as a ritual. knowing your scoby is alive, and when you feed it it feeds you in return. the unspoken exchange of i will do my best to take care of you and i know you will do the same for me.
