This cookie recipe was given to me as my great grandmother's recipe. I have since learned that it was my grandmother's great grandmother's recipe. That means that this recipe likely was written at some point in the late 1,800s or early 1,900s! And now we use it make gonks which does feel like very full circle.
Ingredients
280 grams (1 ½ cups) sugar
205 grams (1 cup) shortening
2 eggs
1 tsp vanilla extract or paste
1 tsp nutmeg
2 tsp baking powder
1 tsp baking soda
1 tsp salt
800 grams (4 cups) flour, plus extra for rolling
180 grams (3/4 cup) milk
Instructions
Preheat oven to 375 degrees
Cream sugar, shortening, and eggs
Add vanilla
Mix dry ingredients in a separate bowl
Add dry ingredients alternatively with milk
Mix small portions with flour and roll to ¼ inch
Bake 10-15 minutes depending on cookie size
For icing: Whisk 900 grams of powdered sugar with milk, add milk by tsp to desired consistency
These cinnamon rolls were designed to look/taste like the ones that an older German couple sold at a stand where I grew up. I make them every year for holidays. They don't get a frosting, but over the course of baking the filling creates a sweet cinnamon goo in the bottom of the pan. When you invert the rolls to get them out, they look/get glazed with that. The recipe uses a stand mixer to make the dough, however I have personally made it by hand as well. This is part of why it calls for melted butter, it is easier to mix in by hand.
Ingredients
Dough
110 grams (½ cup) water
2 ¼ tsp yeast or 1 packet
65 grams ( 1⁄3 cup) and 1 tsp sugar
800 grams (4 cups) flour
1 tsp salt
245 grams (1 cup) milk
4 tbsp melted butter
1 tsp vanilla bean paste
1 tsp lime juice
Filling
1 stick butter
215 grams (1 cup) light brown sugar
2 tsp maple syrup
3 tsp light corn syrup
5 tsp cinnamon
¼ tsp salt
½ tsp vanilla bean paste
Instructions
Mix water, yeast, and 1 tsp sugar in bowl and allow 3-5 minutes to proof
Add flour, sugar, salt, milk, melted butter, vanilla bean paste, and lime juice
Mix on low till combined, then turn up and mix until the dough can pass the windowpane taste
Put in a bowl and cover with plastic wrap, allow to prove ideally in the fridge overnight or for 2 hours at room temperature
Melt the butter for the filling on the stove, add the remaining filling ingredients
Cook until it is bubbling slightly, allow it to cool to just over room temperature before using
Roll the dough to a 12-inchx24-inch rectangle, it is easiest to roll if the dough starts cold
Line a pan with parchment paper, glass or ceramic pans are better than metal
Spread the mixture over the dough, make sure it reaches the edges
Roll the dough the long way to form the cinnamon rolls
Cut into 1-inch pieces, it is easiest to use unflavored floss, but you can use a sharp knife
Place the rolls into the lined pan, they should be touching at the edges but not crammed
