These healthy popsicles are a great way to cool off at any time of the day because they are full of fruit and yogurt. They're great for cooling off on a hot summer day or as a dessert that you can eat without feeling bad about it.
Ingredients: 3 cups mixed berries such as strawberries, blueberries, raspberries. 1/4 cup honey or maple syrup. 1 cup Greek yogurt. 1/2 cup coconut water. 1 teaspoon vanilla extract. 1 tablespoon chia seeds.
Instructions: In a blender, combine the mixed berries and honey/maple syrup. Blend until smooth. In a separate bowl, mix Greek yogurt, coconut water, vanilla extract, and chia seeds until well combined. Pour the berry mixture into popsicle molds, filling each mold halfway. Top off each mold with the yogurt mixture. Insert popsicle sticks into each mold and freeze for at least 4 hours or until completely frozen. Once frozen, remove the popsicles from the molds by running them under warm water for a few seconds. Serve and enjoy!
