After starting as YTS chef with Vaux and finally working as manager of the Ladle, near Stewart Park, for Whitbread he was offered redundancy when the pub fell victim to planners and decided to take his chances on his own.I bought into the Dubliners, which I’ve had for about 12 years now,“ he recalls.
“But after seven, I thought ‘it’s no use just having one little pub’ so I started diversifying and got O’Connells and then The Star.
“Now me and my business partner Rob Robinson are looking to get another couple of places.

“I have big pubs and I have small pubs - and sometimes people who like to drink don’t think a big pub is the right place for them.
“They’re good, but they are high maintenance and a lot of money.
“Sherlock’s doesn’t take a lot of money so we don’t have to break the bank to make money with it.”

“We’re not in London or down South - we’re in Middlesbrough and we need to look after the people here.
“Everyone wants to see regeneration, and I have to take my hat off to the council on this - what they have done around here has worked.
“I think it’s time to get Mary Portas back to see what we’ve been up to and show things in a different light.”
[Cont.] Where’s the fun in running a few ‘normal’ pubs, when you could be running Sherlock’s, The Star, O’Connells, the Wasps Nest and Dubliners?

Looks like a neat little restaurant in a neat little town. I’d definitely visit if I were in the area!
