A tasty summer barbecue recipe for grilled shrimp skewers with sweet peaches, served on a bed of spinach that has wilted. Smoky flavors from the grill, sweet peaches, and garlicky spinach all work well together to make a perfect dish.
Ingredients: 1 lb large shrimp, peeled and deveined. 2 peaches, sliced. 8 cups fresh spinach, washed. 2 tablespoons olive oil. Salt and pepper to taste. 1 teaspoon smoked paprika. 1 lemon, juiced. 2 cloves garlic, minced. 1/4 cup chopped fresh parsley.
Instructions: Warm up the grill over medium-high heat. Add shrimp to a bowl and season with salt, pepper, olive oil, and smoked paprika. Put shrimp and peach slices on skewers one after the other. Grill the shrimp skewers for two to three minutes on each side, or until the shrimp are opaque and the peaches have grill marks. Set a large skillet over medium heat and add olive oil. Add the food to the grill. Mix in the garlic and cook until it smells good. Toss the spinach around in the pan until it wilts. Put the shrimp off the skewers and into the pan with the spinach that has wilted. Add the lemon juice and toss everything together. Before you serve, sprinkle chopped parsley on top. Serve right away and enjoy!
