The tart raspberries and creamy coconut milk in these raspberry-coconut popsicles taste great together. They're great on hot summer days or whenever you want something sweet and cool.
Ingredients: 1 cup fresh raspberries. 1 can 13.5 oz coconut milk. 1/4 cup honey or maple syrup. 1 teaspoon vanilla extract.
Instructions: In a blender, combine raspberries, coconut milk, honey or maple syrup, and vanilla extract. Blend until smooth. Pour mixture into popsicle molds. Insert popsicle sticks into each mold. Freeze for at least 4 hours or until solid. To remove popsicles from molds, run under warm water for a few seconds. Enjoy your refreshing raspberry-coconut popsicles!
