So, I'm in quarantine right now and I'm also poor as fuck and I found myself having to scrounge up food from the stuff my family had lying around. And I found myself randomly wanting to share so I wrote them down. Feel free to try them or not if you'd like.
Also, my apologies, this is kinda long. And I can't do a read more because mobile sucks.
Butter sausage Rice or pasta:
Ingredients-
Butter (1 stick (1/2 cup) per 1 cup dry rice/1 box uncooked pasta)
Italian seasoning
Worcestershire sauce
Garlic powder
Kielbasa (idk how to spell it tbh) sausage (1/2 sausage per stick of butter)
Lemon pepper
5 shakes Paprika
Salt
Pepper
Pasta or rice
Grated parmesan cheese
Directions-
Prep and start cooking desired amount of pasta or rice according to directions on container
Set butter on to melt in separate pot on like medium-low??? heat (my stove has numbers and I usually put it between 2 and 3)
Stir everything except the sausage into the butter and make sure to stir butter occasionally while cutting sausage
Slice the sausage then cut the slices in half. Slices should be a lil on the thick side but not too much. Do this step according to your preference.
Stir sausage into butter sauce
Turn butter sauce to low and stir occasionally until pasta or rice is done
Once rice or pasta is finished stir in the butter sauce
Sprinkle as much parmesan cheese as you would like
Serve and enjoy
Meat??? Stuff???:
Ingredients-
3 tablespoons butter
1 pound ground/shredded meat of choice
Around 1/4 cup frozen pepper onion blend or diced onions and bell peppers
Little bit frozen cut spinach (I just took 2 medium sized frozen clumps) or about 6 to 10 leaves fresh spinach or about 2 to 4 spoonfuls drained (as much as you can) canned spinach
Worcestershire sauce
Barbeque sauce
Little more yellow or brown mustard (according to preference) than there is barbeque sauce
Italian seasoning
Salt
Pepper
Garlic powder
5 shakes Ground ginger
Shredded sharp cheddar cheese
Directions-
Sautee pepper onion blend in a medium sized skillet. Turn down the heat and make sure to move it around the skillet every so often so it doesnt scorch while you're working on the next steps
Melt butter separate from the onion pepper blend (I microwaved it in a bowl for about 45 sec (in 15 sec intervals to make sure it didn't scorch) but you can melt it stovetop if you'd prefer) then mix in Italian seasoning, salt, pepper, garlic powder, and ginger
Mix mustard, Worcestershire sauce, and barbeque sauce into butter/seasoning mixture until well combined
Pour half of the butter mixture over sauteed onion pepper blend and cook for like a couple minutes??? Idk I cooked it until all the flavors had blended well
Remove onion pepper blend from skillet and set aside on a plate somewhere
Cook meat till it's all done, drain it unless you want a lot of grease, then stir in onion pepper blend and the remaining butter mixture and cook for about 5-ish minutes
Add in the spinach and cook until it's thawed (if frozen) or warm (if fresh or canned)
Sprinkle desired amount of shredded cheese
DO NOT STIR IN THE CHEESE
Cover and cook until the cheese is melted.
Serve and enjoy.
PLEASE NOTE
I don't measure many ingredients when I'm cooking, both of these recipes are done to taste. Feel free to adjust any and all details of the recipes to your liking.
The sausage in the rice/pasta recipe can be replaced with a meat of choice or eggs or entirely omitted if you prefer though I have not tried that recipe with fish or any meat alternatives so I'm not sure how the tastes/textures will vary
The meat stuff recipe can become a sauce if you add it to whatever you want to use it as a sauce for before adding the shredded cheese. It's also decent on tortillas.
Margarine/tub butter can replace the stick butter if you would prefer or don't have stick butter lying around
The rice/pasta recipe goes well with any pasta but I've found it goes best with smallish pastas like elbows or rotini.
