With crispy fried potato rounds in place of tortilla chips, Irish nachos are a delicious twist on the classic nachos. Melted cheddar cheese, crispy bacon bits, green onions, and a dollop of sour cream atop these potato nachos. They are the ideal snack or appetizer for any situation.
Ingredients: 4 large russet potatoes, washed and scrubbed. 1 cup shredded cheddar cheese. 1/2 cup cooked bacon bits. 1/4 cup sliced green onions. 1/4 cup sour cream. Salt and pepper to taste. Cooking oil for frying.
Instructions: Set the oven temperature to 400F 200C. Cut the potatoes into slender, 1/8-inch-thick rounds. In a deep fryer or large skillet, heat the cooking oil to 350F 175C. Fry the potato rounds in batches for two to three minutes each batch, or until they are crispy and golden brown. Using a slotted spoon, remove them and set them on a plate covered with paper towels to absorb any remaining oil. Place the fried potato rounds in a single layer on a baking sheet. Evenly distribute the cooked bacon pieces and cheddar cheese shreds on top of the potato rounds. Bake for five to seven minutes in a preheated oven, or until the cheese is bubbling and melted. Take out of the oven and add salt, pepper, and sliced green onions, to taste. Top each plate of hot Irish nachos with a dollop of sour cream.
