Day 340
This day means that I have a mere 25 more days left to reach my 365 day goal. (Easy math!) It’s an opportunity to stretch myself a little and cook food that I have not cooked before. Come on, Regina! Cook outside the box!
Tonight, I cooked a family favorite and I’m not sorry I did, even though it’s pretty standard fare, and not at all outside the box. Garlic Spaghetti. This dish does not always turn out right, if not enough salt, or stock, or cheese. Tonight - perfection. I used 12 large cloves, six sauted in oil, six minced. I was about a quarter cup short of the required 1.5 cups of chicken stock, but no matter. It all still worked. I used Pecorino Romano cheese - lots of it. And I had lots of parsley, too. When I’m at a loss for what to cook for dinner and I happen to have some stock and parsley in the fridge, this is my go-to meal.
Around 4:00 today I was thinking about cookies. I thought I’d give it a pass today. But then I thought, nah. Let’s do it.
I had one egg. I had one cup of mini chocolate chips. I had 15 minutes if I wanted to be eating a cookie by 4:30. These cookies only take six minutes to bake. I couldn’t not.
By 4:30 I was eating a cookie. Well, about four cookies. But they’re mini!
