Ingredients: 4 cod fillets. 4 sandwich buns. 1 cup breadcrumbs. 1/2 cup grated Parmesan cheese. 1 teaspoon garlic powder. 1 teaspoon paprika. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup mayonnaise. 2 tablespoons Dijon mustard. 1 tablespoon lemon juice. Lettuce leaves. Sliced tomatoes. Sliced red onion.
Instructions: Preheat oven to 400F 200C. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper. Coat each cod fillet with the breadcrumb mixture, pressing gently to adhere. Place the coated cod fillets on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the cod is cooked through and the coating is crispy and golden brown. In a small bowl, combine mayonnaise, Dijon mustard, and lemon juice to make the sauce. Toast the sandwich buns if desired. Spread the sauce on the bottom half of each bun. Layer lettuce leaves, sliced tomatoes, red onion, and a baked cod fillet on each bun. Cover with the top half of the bun and serve immediately.
