What do you want after a long exam?

For me it's buying 3 packets of different chips

Mixing them together, crushing them a little and relishing with the two of my closest friends!!!

That's not really a chaat though, as it lacks so many more ingredients lol

But we named it so, as it gave the same feeling of enjoyment and excitement that an actual chaat does!!!

Over the weekend I had a PhD celebration with my friends and cooked a lot of Indian food. Some highlights below!

Chaat Platter and Samosas

Chaat is a type of savory street food served with sweet, tangy, and/or spicy sauces. There can be various types of chaat--this is a Dahi Papdi Chaat, which has a dahi or creamy yogurt base and four chutneys drizzled over it--mint, coriander, tamarind, and sweet tomato. Other ingredients include diced boiled potatoes, boiled chickpeas, soaked black chickpeas, and chopped red onions, tomatoes, and coriander leaves. It is lastly topped with pomegranate seeds, a sprinkle of aloo bhujia or crispy snacks made with gram flour and potato flour, and papdi or round crispy crackers. A few roasted and powdered spices are also sprinkled all over like cumin, chaat masala, garam masala, and my special masala for Indian snacks! It is a very refreshing snack in summer. I couldn't believe how quickly this whole platter was finished by guests!

Samosas are crispy, deep-fried pastries filled with spiced potatoes and other vegetables. They can be eaten individually or in a chaat, which would then be called Samosa Chaat.

For the main course, I made the following:

Palak or Spinach Paneer

Creamy Fenugreek Eggplant, my mom's recipe. It is heavenly.

Dal Makhani, a type of slow cooked lentils.

Chicken Tikka Masala, or marinated chicken grilled in skewers and then simmered in a cashew cream tomato onion gravy.

I also made Jeera or Cumin Pulao, a rice dish to eat with the curries, but forgot to take pictures lol.

Bonus:

I didn't make dessert because my uncle ordered a big cake for me--a white cake with raspberry filling and whipped cream frosting. I loved it so much because the frosting was not too sweet and this was the first time I cut a two-tiered cake!

It was a very lovely celebration and I got a lot of gifts! I'll miss this group of friends so much and it's crazy that I didn't know anyone in this city when I first moved here five years ago! Hopefully we will run into each other at conferences in the future!
