For a tasty vegan take on buffalo wings, try these Baked Buffalo Cauliflower Tacos. It tastes great because it's crunchy from the panko coating, and it's spicy from the buffalo sauce. With fresh cilantro and creamy vegan ranch dressing on top, these tacos are full of flavor and great for a meatless meal.
Ingredients: 1 head cauliflower, cut into florets. 1 cup panko breadcrumbs. 1 cup buffalo sauce. 1/4 cup vegan ranch dressing. 8 small corn tortillas. 1/4 cup chopped fresh cilantro, for garnish. 1 lime, cut into wedges, for serving. Salt and pepper to taste.
Instructions: Preheat oven to 425F 220C. Line a baking sheet with parchment paper. In a bowl, toss cauliflower florets with buffalo sauce until well coated. In another bowl, mix panko breadcrumbs with salt and pepper. Dip each cauliflower floret into the breadcrumb mixture, coating evenly, and place on the prepared baking sheet. Bake for 20-25 minutes, or until cauliflower is tender and coating is crispy. Warm tortillas in a skillet or microwave. To assemble tacos, place baked buffalo cauliflower on each tortilla. Drizzle with vegan ranch dressing. Garnish with chopped cilantro. Serve with lime wedges on the side.
