Try the grey stuff! It’s delicious! I made some chocolate covered coconut balls and with only a few left to cover I started running out of milk chocolate. So I went looking for more and only found some left over red and green coloured white chocolate. I decided it would have to do. And that's how I ended up with grey chocolate.

Oh ballz!
When I was going through my old entries for Traveling By Tastebuds to get them ready for the blog website, there were one or two countries I couldn't find photos of or even any reviews of without photos. St. Lucia being one of them-- even though I distinctly remember making mango in sauce, ice lollys and coconut tablet for this little Caribbean nation.
Oh well, strike up the soca and let's do it again! It's a perfect place to visit the tastes of on Mother's Day anyway, since it's the only country that's named after a woman in the world. Girl power and all that!
I attempted to make coconut snowballs which is a diabetic frenzy of shredded coconut, brown sugar, vanilla, nutmeg, cinnamon and ginger all melted together and then rolled into balls. However, after letting it sit out for the required 10-15 minutes, it definitely was not rollable. I may have cooked out too much of the water when boiling, but it still tastes like it's going to spike my blood sugar levels to an ungodly number. I guess it's a bit more like the coconut tablet I originally cooked for this country.
The other recipe I tried was cocoa tea, a mix of spices, bay leaves and cocoa which is halfway between tea and hot chocolate, so I guess it's aptly named. This is often drank for breakfast throughout all the Caribbean, but St Lucians especially love the sweet and spicy taste of it. It definitely tastes like tea and hot chocolate had a baby-- and what better place to do that then this honeymoon capital of the world.
On the plus side, my house smells AMAZING right now! All the cinnamon, nutmeg, vanilla, allspice, and cocoa scents floating through the air and the sugar in my belly are making me very happy :)
