Prosciutto wrapped dates
Here is a little number that I whip out when I want to impress people - they're the modern day equivalent of Devils on Horseback. A little bit of prep (which you can do the day before, and keep them refrigerated), but worth it!
I like to use Skara Mediterranean Smoked Prosciutto where I can, that smoky flavour is out of this world!
Ingredients:
100g sliced prosciutto, cut crossways
pitted dates (whichever kind you prefer)
approx. 50g goats cheese (soft - could use cream cheese if prefer)
Method:
Fill each date with goats cheese (I tend to use a teaspoon to do this), wrap tightly in the 1/2 slice of prosciutto, place edge-down on a tray lined with baking paper.
Grill the dates for approx. 5-7 minutes, depending on heat of grill. I like them browned, and the fat rendered.
Alternately, you can pan fry them on medium heat, turning every 1-2 minutes (be careful that the prosciutto doesn't unravel).
