The Kellog's Cornflake Crumbs are wonderful for a healthy alternative to fried chicken. You still get the crunch and moistness. I just use the recipe on the box as it's simple and easy enough to fancy up with change in seasonings. It's one of those dishes people think takes all this time, when really you slapped it into the oven and watched some Netflix.
Cornflaked Baked Chicken
yields: 4 servings
prep time: 5 min.
bake time: 30-45min.
INGREDIENTS:
4 pieces Chicken, large fat chunks/skin removed
1-1 1/2 c. Kellog's Cornflake Crumbs
1/2 c. Evaporated Milk (alt. 1 c. Buttermilk)
Salt/Pepper to taste
1/4 c. dried Parsley (or preferred herbs)
dash(es) Hot Sauce (optional)
DIRECTIONS:
Preheat oven to 350F. Lightly grease a baking dish large enough to accommodate all the chicken in 1 layer.
In a large container or gallon ziplock bag, pour in the crumbs and any seasonings/herbs. Close and shake up.
In a shallow dish pour in the milk. Dip the chicken into the milk.
Open the container/bag and drop in all the chicken. Close and shake again. Cover all parts of the chicken with the crumbs.
Remove the chicken and place onto the prepared dish. Bake int he oven for at least 30 minutes, longer if bone in or large breasts. Check juices for doneness. Do not flip the chicken.
