Rugelach from Eva Bakes is a delectable pastry made with cream cheese dough, fruit preserves, nuts, and a hint of chocolate. These crescent-shaped cookies are ideal for any occasion!
Ingredients: 2 cups all-purpose flour. 1/4 teaspoon salt. 1 cup unsalted butter, cold and cut into small pieces. 8 ounces cream cheese, cold and cut into small pieces. 1/4 cup granulated sugar. 1 teaspoon vanilla extract. 1/2 cup fruit preserves apricot, raspberry, or your choice. 1/2 cup finely chopped nuts walnuts, pecans, or almonds. 1/4 cup packed brown sugar. 1 teaspoon ground cinnamon. 1/2 cup mini chocolate chips.
Instructions: Mix the flour and salt together in a food processor. Put in the cream cheese and cold butter. Pulse the ingredients together until they look like big crumbs. Mix in the vanilla extract and the powdered sugar. Once more, pulse the dough until it forms a ball. Split the dough into 4 equal pieces. Make a disk shape out of each piece, wrap it in plastic wrap, and put it in the fridge for at least an hour. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Put some flour on a surface and roll out one disk of dough into a 9-inch circle. Put a thin layer of jam on top of the dough, leaving a little space around the edges. Cut up the nuts and put them in a bowl. Add the brown sugar and ground cinnamon. Put this mix on top of the fruit preserves. Cut the circle of dough into 8 wedges with a sharp knife or pizza cutter. Begin at the wide end and roll up each wedge tightly to make a crescent shape. As soon as the baking sheet is ready, put the rugelach on it. Do the same thing with the rest of the dough disks. Take the rugelach out of the oven and heat it up. Bake them for 18 to 20 minutes, or until they turn golden brown. Take them out of the oven and let them cool for a few minutes on the baking sheet. Then, move them to a wire rack to cool all the way down. Warm the little chocolate chips in the microwave or over a double boiler after the rugelach are cool. Spread the melted chocolate over the rugelach or dip it in it. Wait until the chocolate is set before you serve it.
