Not a bad end to my Monday. A healthy, easy version of chicken piccata (my FAVORITE Italian dish). No breading! - grill thinly sliced chicken breasts (seasoned with salt and pepper) in 1 tbsp olive oil for about 4 minutes on each side - add 2 tbsp butter, 2-3 garlic cloves (minced), one squeezed lemon, some shaved lemon zest, and a tbsp of capers In a pot, bring water to boil for pasta (I use Heartland gluten free pasta by The American Italian Pasta Company...best GF pasta I've ever had) . In the last two minutes, throw in chopped asparagus to blanche. Then strain water out of pot. Find a citrusy Sauvignon Blanc in your wine fridge. Open cap. Pour glass as full as the unopened mail folder in your inbox. Enjoy while cooking AND with your lovely, easy dinner. The bright flavors of a Marlborough Sauv Blanc go spectacularly well with this dish. Remove chicken from pan and place on separate plate. Then pour lemony mixture left in pan over the pasta and asparagus. Serve with freshly grated Parmesan cheese.
