It’s not my favorite, but it’s cute enough. They at least do have common interest, are compatible and do have fun together. It’s not a pair that I imagine to be long term, but it’s worth the fun.

Ditzy Crisp Banana Nut Muffins

These banana muffins take a little bit of work but they are undoubtedly worth it. Topped with cinnamon crisp and toasted pecans, every bite is a sweet and crunchy taste of happiness! What you’ll need: For the muffins:

3/4 cup butter, softened 8 oz. cream cheese, softened 2 cups sugar 2 eggs 3 cups flour 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 1/2 cups mashed bananas (about 4 medium sized ones) 1 cup chopped pecans, toasted 1/2 tsp. vanilla extract For the topping:

1/2 cup brown sugar 1/2 cup chopped pecans, toasted 1 Tbsp. flour 1 Tbsp. melted butter 1/8 tsp. cinnamon

Directions:

Preheat your oven to 350 degrees fahrenheit.

Beat the softened butter and cream cheese until smooth using an electric mixer set to medium. Gradually add the sugar and continue beating until light and fluffy. Add eggs to the mix, one at a time, beating just until blended after each addition.

Combine the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the butter mixture while beating at a slow speed just until blended.

Stir in bananas, pecans, and vanilla.

Spoon batter into lined paper cups or a greased muffin tin.

To prepare the topping, stir together all the topping ingredients in a medium sized bowl until combined.

Sprinkle the topping mixture evenly over the batter.

Bake muffins for 25 minutes or so. You can test whether they are done by inserting a wooden toothpick into the middle of a muffin. If the toothpick comes out clean (give or take a few crumbs) then the muffins are cooked through and ready to come out.

Let the muffins cool until they’re just nice and warm, then enjoy with a fresh cup of tea or share them with your friendly neighborhood mail pony!
