Make creamy and delicious cottage cheese at home using your Instant Pot. It's a simple and rewarding process that yields fresh cheese for various dishes.
Ingredients: 1 gallon whole milk. 1/4 tablet rennet or 1/4 cup white vinegar. 1/4 cup cool water. 1 teaspoon salt.
Instructions: Pour the whole milk into the Instant Pot. Press the 'Yogurt' button and adjust the temperature to 185F. Allow the milk to heat, stirring occasionally to prevent sticking. Once the milk reaches 185F, turn off the Instant Pot. In a separate bowl, dissolve the rennet or mix the white vinegar in cool water. Gently stir the rennet mixture into the heated milk. Cover the Instant Pot with a lid and let it sit undisturbed for 1 hour. After an hour, check for a clean break by inserting a knife into the curd. If it cuts cleanly, it's ready. Cut the curds into small cubes and let them sit for 5 minutes. Press the 'Saute' button on the Instant Pot and slowly heat the curds to 105F, stirring gently. Once the curds reach 105F, turn off the Instant Pot and let the curds sit for an additional 5 minutes. Line a colander with cheesecloth and carefully transfer the curds into the colander. Sprinkle salt over the curds and gently mix. Tie the cheesecloth into a bundle and hang it to drain for 1-2 hours. Once drained, refrigerate the cottage cheese and enjoy!
