Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 cups granulated sugar. 3/4 cup unsweetened cocoa powder. 1 1/2 tsp baking powder. 1 1/2 tsp baking soda. 1 tsp salt. 2 large eggs. 1 cup buttermilk. 1/2 cup vegetable oil. 2 tsp vanilla extract. 1 cup boiling water. 1 1/2 cups semisweet chocolate chips. 2 cups heavy cream. 1/4 cup powdered sugar. 1 tsp vanilla extract. 1/2 cup white chocolate chips. Chocolate shavings or cocoa powder for garnish.
Instructions: Set the oven temperature to 175C 350F. Butter and dust two 9-inch circular cake pans. Mix together flour, sugar, baking soda, cocoa powder, baking powder, and salt in a large mixing bowl. Stir in buttermilk, eggs, vanilla extract, and vegetable oil. Beat at a medium speed until thoroughly blended. After the batter is smooth, stir in the boiling water. It's acceptable that the batter will be thin. Add semisweet chocolate chips and mix. When a toothpick inserted into the center comes out clean, bake the batter for 30 to 35 minutes after spreading it evenly among the prepared pans. After taking the cakes out of the oven, let them cool in the pans for ten minutes before moving them to a wire rack to finish cooling. Make the chocolate mousse after the cakes are fully cool. Melt the white chocolate chips in 20-second increments in a microwave-safe bowl, stirring in between, until smooth. Allow it to cool a little. Beat 1 cup heavy cream, powdered sugar, and 1 tsp vanilla extract in a different bowl until stiff peaks form. Once the white chocolate has melted, gently fold it into the whipped cream until thoroughly blended. Transfer one of the cakes onto a platter for serving. Evenly cover the top of the cake with a layer of chocolate mousse. After putting the second cake on top, pour the remaining chocolate mousse over the whole cake. To set the mousse, refrigerate the cake for a minimum of two hours. Before assembling the cake, beat the remaining 1 cup heavy cream until stiff peaks form, then pipe the cream however you like.
