Eleanor’s Bartender, Erik Ellickson has been making his very own apple shrub, which you can taste for yourself in the cocktail, Brown Thrasher, made with Bourbon, lemon, molasses, apple shrub, and Averna amaro.
We asked Erik to let us in on the process of making the shrub, and he offered up the recipe in case you’d like to try making it at home. Make it ahead of time, and use it to spice up your holiday drinks!
Erik’s Apple Shrub
Ingredients:
24 Granny Smith Apples
3 Quarts Granulated Sugar
4-6 Ounces Ground Cinnamon
3-4 Quarts of Water
8-10 Ounces of Bragg's Organic Apple Cider Vinegar
Supplies:
Food Processor
Apple Wood OR Hickory Smoke Chips
Match Light Charcoal (Medium Sized Bag)
Apple Corer
Big Strainer
Cheese Cloth
Cutting Board
2-3 Big Multi-Gallon Pots
Grill
General Grilling Supplies
Pre-Process:
Batch 3 quarts of sugar and 4-6 ounces of cinnamon together in a sealable container(s) overnight.
Process:
Slice/core all apples while soaking wood chips in a cold water filled pot for 30 minutes. Prepare the grill for smoking/grilling apples (light charcoal, heat up grill).
Once coals are white hot, transfer soaked wood chips to the coals and place all apple wedges on top of the grill. Close the grill and let smoke for an hour or more (or until the grill loses temperature/smoke).
Apples should appear to be brown and should feel firm (and warm!) with a smokey smell, transfer from grill to food processor - adding water to help break down the apple wedges. Let apples break down into an apple-sauce-like texture.
Transfer "apple sauce" to big pot and set to low/medium heat, adding enough water to thin the sauce down to a liquid (note: most of the water will cook/steam off anyways but will help blend the remaining ingredients together.
Once warm/steamy, slowly pour in the 3 quarts sugar/cinnamon mix, covering and stirring occasionally until it all begins to boil (approximately 1 hour or so).
Transfer contents to a strainer lined with cheesecloth over another big pot, mashing contents with a muddler/spoon to separate the liquid from the sauce/chunks/skin bits/etc.
Once entirely strained, allow contents to cool 5-10 minutes. Add Organic Apple Cider and lightly stir. Let stand until cool to touch, seal, refrigerate. Allow time to refrigerate overnight or 6-8 hours. Taste, add to cocktails and enjoy!
Last year, Sweetwater produced Second Helping IPA for the first time. It raised well over $40,000 for The Giving Kitchen between Sweetwater, United Distributors and all the retail outlets and restaurants contributing. This helped over 20 people in crisis in 2014.
This year, it will be available on draft for the first time, and Eleanor's at Muss & Turner's is going to be the first to tap it.
Join us Friday, January 9 to be one of the first people to try Sweetwater's 2015 Second Helping IPA as we honor the anniversary of our friend Ryan Hidinger's passing. We will offer a rare chance to try the beer from a cask with extra juniper berries added. You can try the beers one after the other or side by side.

Q: What is your position at Eleanor's?
A: My position at Eleanor’s is as the Social Media Coordinator where I get to creatively create content about Eleanor’s findings, musings, and inspirations for the women’s bicycle lifestyle community. I also get to manage Eleanor’s social media engagement sites, and network with other professional and like minded women and businesses. It’s pretty much a bicycle bloggers dream job come true.
Q: Where is your favorite destination for a bicycle ride?
A: My favorite bicycle ride destination is the journey from San Francisco to Stinson Beach. The rolling mountains, tall trees, breathtaking sights and heights! The reward for this vigorous ride is a dip in the beach and a nice lunch by the sea side.
Q: Does your bike have a story?
A: WendyBird was given to me as a Christmas gift. I had been asking for a bike for ages and was surprised with one when I got home from visiting family for the holiday. I remember my first ride with her was like flying and I felt like WendyBird in Neverland, that's how she got the name. Although she started off as a regular Wendy of the real world, she certainly became WendyBird of Neverland after I was done changing her parts to make her fast and comfortable.
Q: What is your favorite restaurant in Brooklyn?
A: My favorite restaurant in Brooklyn so far is Peaches HotHouse, a little southern country cooking gem in BedStuy. They have amazing burgers, spicy chicken, and probably the best mac and cheese ever. The service is great and the atmosphere is top notch exciting.
Q: Early bird or night owl?
A: Definitely an early bird- active brain, coffee slurping, and most productive parts of my day. I get all my best blog post ideas in wee hours of the morning.
Q: Who is someone you admire?
A: Hillary Clinton! Intelligent above all, politician extraordinaire, and just outright the fiercest lady in our world today. H. Clinton 2016!
