These Rosemary Shortbread Cookies are a delightful blend of buttery and herby flavors. The addition of fresh rosemary adds a unique twist to the classic shortbread cookie.
Ingredients: 1 cup unsalted butter, softened. 1/2 cup granulated sugar. 2 cups all-purpose flour. 1 tablespoon fresh rosemary, finely chopped. 1/4 teaspoon salt.
Instructions: In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the chopped fresh rosemary to the butter-sugar mixture and mix well. Gradually add the all-purpose flour and salt to the mixture. Mix until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour. Preheat your oven to 350F 175C. On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes and place them on a baking sheet lined with parchment paper. Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the edges of the cookies are lightly golden. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Once the cookies are completely cool, you can optionally dust them with powdered sugar for extra sweetness. Enjoy your delicious rosemary shortbread cookies!
