Brewday - Green Hop English Red Rye

Now it's officially Autumn! Despite the terrible weather recently it was sunny and breezy enough one day to get my first Fuggle harvest in while the mash was on for my annual Green Hop Brew.

I mashed in with 84% Pale Maris Otter, 10% Red Rye Crystal and 6% Torrified wheat.

Using just 5g of last year's dried Fuggles for a 60 minute bittering addition with 300g of fresh picked wet hop Fuggles for 15 minutes and then 450g for the final 5. I wanted to keep the IBU’s down on this as I’ve overshot with the bitterness on quite a few English style beers this year, always difficult to gauge with homegrown hops.

The beauty of wet hopping is they don't soak up any wort so really easy to add loads and then filter out after the boil, bonus! Everything went to plan with an OG of 1.049 and I pitched SafAle S-04 English Ale yeast to ferment at 18c.

The rest of the hops I’d picked for this beer were put out to dry and after 4 days the beer was down to 1.012 so I added 100g of these and vac packed the rest. It was rather hard to get such a large amount of leaf hops into the beer while in a muslin bag but did my best to press it down without disturbing the beer too much.

I dry hopped for 5 days, removed the bag and crash cooled. Final Gravity was 1.008, so 5.4%. Sample was tasting very pleasing, I’ll report back once it’s conditioned fully.
