Indulge in the luxurious flavors of seafood, garlic, and spinach combined with creamy Alfredo sauce over perfectly cooked pasta.
Ingredients: 8 oz fettuccine pasta. 1 lb mixed seafood shrimp, scallops, and/or crab meat. 2 tablespoons olive oil. 4 cloves garlic, minced. 2 cups fresh spinach leaves. 1 cup heavy cream. 1 cup grated Parmesan cheese. Salt and pepper to taste. 1 tablespoon chopped parsley, for garnish.
Instructions: Follow the directions on the package to cook the fettuccine. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. For about one minute, until the garlic smells good, add the minced garlic. After adding the seafood, cook until it's almost clear, which should take about 3 to 4 minutes. Put in the fresh spinach leaves and cook for about two minutes, until they wilt. Add the heavy cream and bring it to a low boil. Give it a little time to thicken, about two to three minutes. Add grated Parmesan cheese and mix it in until it melts and the sauce is smooth. Add pepper and salt to taste. Toss the cooked fettuccine in the pan with the sauce until it is well covered. Add chopped parsley as a garnish before serving. Have fun!
