Ingredients: 2 lbs dry aged beef. 2 tbsp olive oil. 2 cloves garlic, minced. 1 tsp rosemary, chopped. 1 tsp thyme, chopped. 1 tsp salt. 1/2 tsp black pepper.
Instructions: Preheat oven to 400F 200C. In a small bowl, mix olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper to create a herb rub. Rub the herb mixture all over the dry aged beef, ensuring it's evenly coated. Place the beef on a roasting pan or baking sheet. Roast in the preheated oven for about 25-30 minutes for medium-rare, or adjust cooking time according to desired doneness. Once cooked, remove from oven and let it rest for 5-10 minutes before slicing. Slice the beef thinly against the grain and serve.
