Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 1/2 cup unsweetened cocoa powder. 4 large egg yolks. 1 teaspoon vanilla extract. 1/4 teaspoon salt. Optional: chocolate chips or chopped chocolate for extra richness.
Instructions: In a saucepan, combine heavy cream, whole milk, sugar, and cocoa powder. Cook over medium heat, stirring constantly, until the mixture is hot and sugar is dissolved. In a separate bowl, whisk the egg yolks. Gradually whisk in about 1 cup of the hot cream mixture into the egg yolks to temper them. Pour the egg mixture back into the saucepan with the remaining cream mixture. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon. Remove from heat and stir in vanilla extract and salt. Strain the mixture through a fine-mesh sieve into a clean bowl to remove any lumps. Cover and refrigerate until completely chilled, preferably overnight. Transfer the chilled mixture into the bowl of a Kitchen Aid mixer and churn according to the manufacturer's instructions. If desired, add chocolate chips or chopped chocolate during the last few minutes of churning.
