Matcha Crinkle Cookies 🍵🍪
Matcha White Chocolate Chip Cookies
Because everyone I've ever made these for wants the recipe and I'm not the type to keep recipes secret because that's weird:
Ingredients: ¾ Cup unsalted butter, softened (1 and ½ sticks) ¾ Light brown sugar, packed ¼ cup white sugar 1 large egg 1 teaspoon vanilla extract (or ½ vanilla, ½ almond) 2 cups minus 1 tablespoon all-purpose flour 1 tablespoon Matcha (green tea) powder, best grade you can afford 1 3.5-ounce packet (1 box) instant vanilla pudding mix – not sugar-free and not cook & serve 1 teaspoon baking soda pinch salt 2 cups white chocolate (or vanilla) chips
Combine butter, sugars, egg and extracts to bowl or stand mixer, beat on medium-high until creamed and well combined, about 4 minutes in stand mixer, maybe longer by hand. Scrape down to bottom of bowl and add flour, Matcha powder, pudding mix, baking soda and salt. Beat on low speed until just combined, about 30 seconds to a minute. Cookies will be greenish, you can add some green food coloring for extra pop. Using a large spoon or cookie scoop, form 12-14 equally sized balls of dough. Place on large plate or tray and freeze at least 2 hours or overnight. This really makes all the difference! Baking unchilled dough makes for flat cookies. Preheat oven to 350 F, spray cookie sheet lightly with cooking oil or brush with melted butter. Space cookies 2 inches or so apart so they don’t stick together when baked. Bake for at least 10 minutes, until the edges have tanned and the tops are just set. Remove from oven and set cookie sheet on a heat-safe surface for at least 10 minutes – cookies will firm as they cool. Store in airtight container for up to 1 week or in the freezer for up to 6 months. Unbaked dough can be stored in airtight containers in the refrigerator for up to 5 days or in the freezer for up to 4 months.
These will EASILY translate to other kinds of cookies - exclude the Matcha powder and use the full 2 cups of flour, and switch the white chocolate for milk or dark and add a pinch of cinnamon for the best damn chocolate chip cookies you've ever had. I'm about to make a stupidly large amount of cookie dough which I will then freeze in zip bags for later use. I want to try subbing the Matcha powder with powdered freeze-dried strawberries and the vanilla pudding mix with strawberry pudding. I mean, it can't POSSIBLY be bad, right?
