Lillandril Tonic Tea
Sweet, aromatic, and as fresh as a cool sea breeze in Summerset, Lillandril's local tonic tea has been an Altmer pick-me-up for hundreds of years and is a fabulous little mocktail that is a hit with those who prefer non-alcoholic beverages!
This recipe is dedicated to @katistrophe, who has been an absolute angel to me over the past few months. I appreciate your support so much!
You will need:
350ml cold sparkling water
100ml strong jasmine tea (Chinese jasmine tea is great), cooled to room temperature or colder
Juice of 1/2 lime
50ml elderflower cordial
20ml jasmine simple syrup
1 tbsp mint syrup
1/2 small mango, mashed to pulp
Handful of crushed ice
Mint leaves, to garnish
Method:
In a blender, combine the mango, syrups, lime juice, and jasmine tea. Blend well til combined.
In a chilled tall glass mix together the sparkling water and elderflower cordial. Pour in the mango mixture and stir well.
Top with mint to garnish and serve cold.

Ingredients:
Makes 1 cocktail
Basil Syrup:
1 cup (200 g) granulated sugar,
1 cup (240 ml) water,
1 cup (12 g) basil leaves
Cocktail:
1 egg white* or 2 Tbsp. aquafaba (optional),
2 oz. (60 ml) freshly brewed green tea,
¾ oz. (22.5 ml) Basil Syrup,
¾ oz. (22.5 ml) fresh lemon juice,
½ oz. (15 ml) pineapple juice,
Basil leaf, for garnish
Make the Basil Syrup:
Step 1: In a small saucepan over medium heat, combine the sugar, water, and basil. Once boiling, turn down the heat and let simmer for 1 minute. Remove from heat and let steep, covered, for 30 minutes.
Step 2: Using a strainer, strain the mixture into a resealable container. Store in the refrigerator for up to 2 weeks.
Make the cocktail:
Step 3: In a cocktail shaker, combine the egg white or aquafaba (if using), green tea, basil syrup, lemon juice, pineapple juice, and ice. Shake until chilled. Strain into a coupe glass and garnish with a basil leaf.
*Raw egg is not recommended for the elderly, pregnant women, people with weakened immune systems…or people who don’t like raw egg.

Hasphat's sticky guar tonic
When I first saw the name of this drink on the menu at The Retching Netch on Solstheim, I was slightly appalled. Why would Hasphat Antabolis of Fighter's Guild fame harm a cute guar, and why on Mundus would anyone drink a guar tonic? Luckily the "guar" refers in fact to guarana, a berry that's renowned for giving energy. Sweet, sour, and very, very sticky, this drink is delicious to savour on hot days during ash storms!
NB: You can replace the mead with sparkling grape juice if you prefer a non-alcoholic version!
You will need:
1 cup frozen raspberries
1/4 cup frozen redcurrants
1/4 cup tinned rhubarb
2 tbsp raspberry jam
1/4 cup honey
750ml mead of your choice (I like Lyme Bay Winery's Christmas mead)
250ml pomegranate juice
250ml Monster energy drink
2 cups ice
Method:
Whiz all the ingredients together in a blender until smooth. Serve in a chilled jug.

Santa’s Cold
(Mocktail)
Ingredients:
> One large egg white (30 grams)
> Kiwi fruit juice (6 grams)
> frozen raspberries (30 grams)
> 1/4 of a teaspoon of vanilla extract
> 1/4 of a teaspoon of peppermint extract
Directions:
Defrost the raspberries in a microwave in 30 second bursts until they have released their juices. Pour into a small glass and set aside.
Add the egg white, kiwi fruit juice, vanilla extract and the peppermint extract to a shaker and shake well. Then add ice and shake again.
Pour the shaken mixture through a strainer over the raspberries in order to make sure none of the ice gets in the drink. Serve immediately.
