Referred to as Burgundy's "Golden Gate,” Chablis is the northernmost region in Burgundy. It can be argued that Chablis is the purest expression of Chardonnay, the only grape permitted in the appellation. I think the good folks at @PureChablis put it best. Domaine Denis Race 2015 Chablis Premier Cru Vaillons (SRP $26): This is a fourth generation estate in Chablis, planted with parcels of vines aged 2 to 65 years old. Pale straw in color; there are reticent notes of lemon, green apple, talc, bruised pear and mineral tones. Brightly acidic—sleek and streamlined mouth-feel; it is pleasing on its own, but I can imagine it going well with foods of all sorts.
