My version of an off-the-cob Mexican street corn. For a small serving for two, cut corn from two cobs and stir in an ounce of feta, teaspoon of minced jalapeno, 1/2 small garlic clove minced, 2 tblsp chopped cilantro, 1 tblsp mayo, pinch chili powder and a sprinkle of salt. Yum.
