Instructions: Soak the rice vermicelli noodles in hot water for 3-4 minutes, then drain and set aside. In a large wok or skillet, heat the vegetable oil over medium-high heat. Add minced garlic and saut for about 30 seconds until fragrant. Add thinly sliced onions and bell peppers, and stir-fry for 2-3 minutes until they begin to soften. Push the vegetables to one side of the wok and add the beaten eggs. Scramble them until they are cooked through, then mix them with the vegetables. Add the shrimp and chicken slices to the wok, and stir-fry for 2-3 minutes until they turn pink and the chicken is cooked through. Toss in the drained rice vermicelli noodles, soy sauce, oyster sauce, and curry powder. Mix well to coat the noodles and ingredients evenly. If you like it spicy, add chili paste according to your preference. Season with salt and pepper to taste.
