Ingredients: 1 sheet frozen puff pastry. 3 ripe nectarines, thinly sliced. 1 cup ricotta cheese. 1/4 cup honey. 1 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground ginger. 1 egg, beaten for egg wash.
Instructions: Preheat oven to 375F 190C. Thaw puff pastry according to package instructions. In a bowl, mix ricotta, honey, cinnamon, nutmeg, and ginger until well combined. Roll out puff pastry onto a baking sheet lined with parchment paper. Spread the ricotta mixture evenly over the pastry, leaving a small border around the edges. Arrange sliced nectarines on top of the ricotta mixture. Brush the edges of the pastry with beaten egg. Bake for 25-30 minutes or until the pastry is golden brown and the nectarines are tender.
