Story

This banana bread recipe has been passed down through our family for several generations. My children, now adults, still love to come to my house and smell the aroma of banana bread baking. It is delicious, healthy, and soothes the soul.

Ingredients

1 cup sugar

½ cup margarine

1 egg

1 cup mashed ripe banana

¼ tsp salt

½ tsp nutmeg

1 ½ cup all-purpose flour

2 T unprocessed wheat bran (optional)

Method

Cream together sugar, margarine, and egg. Add mashed banana. Mix well. Dissolve 1 tsp. baking soda in ¼ cup water. Add dry ingredients and baking soda to sugar/margarine/egg mixture. Pour into a well-greased bread pan. Best if you line the bottom of pan with wax paper or parchment paper. Bake at 350° for 40 to 45 min. until toothpick comes out clean in center of bread. Optional: Add ¼ to ½ cup chopped nuts or chocolate chips.

I usually double the recipe and freeze a loaf.
