These Sambal Chicken Skewers are a perfect combination of spicy and savory flavors. The sambal oelek chili paste adds a kick of heat, while the honey and soy sauce balance the flavors. They are great for a BBQ or as an appetizer for your next gathering.
Ingredients: 1.5 lbs boneless chicken thighs, cut into 1-inch pieces. 1/4 cup sambal oelek chili paste. 3 cloves garlic, minced. 2 tablespoons soy sauce. 2 tablespoons honey. 1 tablespoon vegetable oil. 1 teaspoon grated ginger. Wooden skewers, soaked in water for 30 minutes.
Instructions: In a bowl, combine the sambal oelek, minced garlic, soy sauce, honey, vegetable oil, and grated ginger to make the marinade. Add the chicken pieces to the marinade and mix well to coat. Cover and refrigerate for at least 1 hour, or overnight for better flavor. Preheat your grill to medium-high heat. Thread the marinated chicken pieces onto the soaked wooden skewers. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until they are cooked through and have a nice char on the outside.
