A delightful seafood bake combining shrimp, scallops, and mussels with colorful bell peppers, cherry tomatoes, and aromatic herbs, all baked to perfection. This dish bursts with flavors of the sea and is perfect for a cozy dinner or entertaining guests.
Ingredients: 500g mixed seafood shrimp, scallops, mussels. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 onion, chopped. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 cup cherry tomatoes, halved. 1/4 cup white wine. 1/4 cup chopped parsley. Salt and pepper to taste. 1 lemon, sliced.
Instructions: Warm the oven up to 190C 375F. Warm up the olive oil in a big pan over medium-low heat. Add the onion and garlic and cook until the smell is nice. Put in the cherry tomatoes and bell peppers. Cook until the peppers get a little soft. Add the white wine and stir it in. Then wait two minutes. Season with salt and pepper and then add the mixed seafood and parsley to the pan. For another two to three minutes, cook. Put the seafood mixture in a baking dish. Put lemon slices on top. Place the dish in an oven that has already been heated up. Bake for 15 to 20 minutes, or until the seafood is fully cooked and the top is golden brown. Serve hot, and if you want, top with more parsley.
