A colleague from our UK office is visiting us at HQ this week and ... long story short ... I just ate a gigantic plate of shrimp fajitas for dinner. 😅 While I lay here largely motionless in recovery from this meal, allow me to go ahead and post this beaut - same guitar whose neckplate got featured here most recently. This particular guit was a test order placed just prior to launch of the 2014 American Design Experience website effort (predecessor to the Mod Shop of today that we know and love). Shrimp fajitas are a delicious and easy-to-make seafood dish perfect for a quick weeknight dinner or casual entertaining. The shrimp and vegetables are seasoned with a flavorful blend of spices and then sautÃ©ed until perfectly cooked. Serve the shrimp and veggie mixture in warm tortillas with your favorite toppings for a satisfying meal.

Ingredients: 1 lb shrimp, peeled and deveined. 2 bell peppers, thinly sliced. 1 onion, thinly sliced. 2 cloves garlic, minced. 2 tbsp olive oil. 1 tsp chili powder. 1 tsp cumin. 1/2 tsp paprika. 1/2 tsp garlic powder. 1/2 tsp onion powder. Salt and pepper to taste. 8 small flour tortillas. Optional toppings: shredded cheese, sour cream, salsa, guacamole, lime wedges.

Instructions: In a large bowl, combine shrimp, bell peppers, onion, garlic, olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Toss until everything is evenly coated. Heat a large skillet over medium-high heat. Add the shrimp and vegetable mixture to the skillet. Cook, stirring occasionally, until the shrimp are pink and cooked through, and the vegetables are tender, about 5-7 minutes. Warm the tortillas in a separate skillet or in the microwave. Divide the shrimp and vegetable mixture evenly among the tortillas. Serve with optional toppings such as shredded cheese, sour cream, salsa, guacamole, and lime wedges.
