I’m starting to think about Thanksgiving, even though we are not having our usual company and feast. It’s just the two of us. Maybe my brother and sister-in-law. 😢Still, I’ll make a turkey and some traditional sides. Plus a quick bread— this one, dairy-free, and made with cooked winter squash and cranberries. This Gluten-Free Applesauce Bundt Snack Cake is a tasty, moist treat that can be eaten as a snack or for dessert. It's made with gluten-free all-purpose flour and tastes great with applesauce and warm spices.
Ingredients: 2 cups gluten-free all-purpose flour. 1 1/2 teaspoons baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1 1/2 cups unsweetened applesauce. 1/2 cup chopped walnuts optional. Powdered sugar for dusting optional.
Instructions: Preheat your oven to 350F 175C. Grease and flour a Bundt cake pan. In a medium bowl, whisk together the gluten-free all-purpose flour, baking soda, salt, ground cinnamon, ground nutmeg, and ground cloves. Set aside. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, followed by the vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing until well combined. Stir in the unsweetened applesauce and chopped walnuts if using. Pour the batter into the prepared Bundt cake pan and smooth the top. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once the cake has cooled, dust it with powdered sugar if desired. Slice and enjoy!
