Ingredients: 1 cup unsalted butter, softened. 1 1/2 cups granulated sugar. 1 cup Greek yogurt. 2 teaspoons vanilla extract. 2 large eggs. 4 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 1/2 teaspoon cream of tartar. Additional granulated sugar for rolling cookies.
Instructions: Preheat your oven to 350F 175C and line baking sheets with parchment paper. In a large mixing bowl, cream together the softened butter and 1 1/2 cups of granulated sugar until light and fluffy. Add the Greek yogurt, vanilla extract, and eggs. Mix until well combined. In a separate bowl, whisk together the flour, baking soda, salt, and cream of tartar. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Shape the dough into 1-inch balls and roll them in additional granulated sugar to coat. Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart. Flatten each dough ball slightly with the bottom of a glass or your fingers. Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden. Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
