Fat Mama’s fried potato hack:
Don’t peel them, scrub them. Cut them to the same sized cubes. Cover the skillet and let them steam. Brown them just before serving. Cuts the cooking time in half or more.
I love rustic, cottage fried potatoes. This is where white or gold or red potatoes shine for me.
I rarely peel them, but I do scrub them with a stiff brush. When the skin on the potato starts to come off, scrubbed enough!
Cut the potatoes into cubes, make the cubes as close to the same size as you can, they will all be done at the same time that way.
Use a skillet that has a lid. If you don’t have a skillet with a lid, try out different plates over the top of the skillet, does another skillet cover the opening? Use that. No? Then tear a piece of foil to fit.
Melt butter and add olive oil, once the butter is all melted and foamy add the potatoes. Season with salt, garlic powder, onion powder, smoky paprika, maybe even some fresh chopped parsley. Cover the potatoes and let them steam on a moderately low burner. Use the fat from cooked bacon, or from duck or chicken if you like. Keep the crispy bacon to chop up and add at the end.
Don’t worry I like some crispiness in my home fries too. Covering the potatoes and letting them steam cooks them very quickly. All of them, so if you pile the spuds into a pan like I do, this hack is a great help. If I had a huge flat top stove, I wouldn’t need to steam them. I could just fry them uncrowded on the stove top. But, I don’t, and I don’t foresee one in my future!
Lift the corner of the lid, plate, foil carefully, steam will escape and it will burn your fingers, use cooking tongs if you don’t have a lid with a top handle. Poke a couple of potato pieces with a fork. Are they easily pierced? Called fork tender? If they are, take the cover off the skillet, and increase the heat under the skillet. Add more butter or oil, let the bottom layer brown, shake the pan, and turn the potatoes.
While I’m waiting for my potatoes to become tender, I may sauté sweet peppers and some onions. Once the potatoes are to the browning stage toss those in. I love chives and green onions mixed in too.
Once the potatoes are browned to your satisfaction – Taste Them. Adjust the seasoning. You may want to let them brown longer, or you can slide your skillet under the broiler to brown on top as well as bottom.
Ready to serve? Oh, now you can get creative, top them with: bacon bits, shredded cheese, green onions, sour cream, top with fluffy scrambled eggs, add in seasoned browned and crumbled; ground beef, ground turkey, ground pork or pork sausage. I was stunned when I served a skillet full of these browned potatoes, topped with bacon and cheese to my daughter’s friends. Even after everyone had eaten, they came back for just one more nibble of potatoes. Seasoning and browning does it again!

Meatloaf with Steamed Potatoes
Guaranteed to be quickly devoured!!
Preheat oven to 325 degrees F. Saute 1/4 onion till translucent. Cool.
In a bowl, combine two pounds of lean ground beef, onion, 1 tsp ground mustard, Johnny's Seasoning Salt, white pepper, paprika, a splash of Tabasco, a splash of Worcestershire Sauce, and bread crumbs. Shape ingredients into a loaf, and place in a loaf pan. Top with barbecue sauce.
Bake for 1 hour at 325 degrees. Drain off drippings. Raise temperature to 350 and bake for another hour.
While meatloaf is baking, quarter potatoes and place in steamer. After meatloaf has baked 2 hours, drain drippings again and top with more barbecue sauce. Place back in oven. Steam potatoes for 20 to 25 minutes or until soft.
Remove meatloaf from oven and loaf pan. Carve into slices.
Serve, and enjoy!!
