Well, this weekend was awesome. Redcrosse was here, I made Ice Cream and Cake that was Phase 3 approved for the FMD, I got my wedding dress back, and we all celebrated my dad's birthday and Father's day.
That being said, I'm exhausted.

I made the icing for the cake from the website too but here's where things took a turn for the worse....or not exactly as planned. I learned this weekend that there are some coconut milk companies who don't make that good of coconut milk. Here's how to tell if the coconut milk is still good in the can (or at least workable for the recipe: shake the can and if you here separation (clumping and the loose oil) you need to get another can. The coconut milk should not have separated. If it did then the icing won't work. It will still taste good but it doesn't turn out very well with the whole whipped part. I will definitely be making more dessert next weekend.
ALSO, let me just tell you something: if you're going to me making cauliflower crust pizza and don't have a ton of time, just go to the frozen section and get some of the cauliflower florets that have already been cut up for you. I did that for the chocolate cake recipe and it saved so much time! I'll be trying my hand at the pizza again this weekend and hopefully posting the pictures that go along with it.
I didn't weigh myself this morning. I'm following the usual plan of starting weighing myself on Tuesdays. My dad and I are going to play tennis tonight for our cardio and then tomorrow we're doing p90x plyo. I'm not super excited about it but it is a change of pace. We're going to run on Wednesday morning and Friday morning. My dad's Polar FT40 should be here on Tuesday so that's going to be good for run times for him. We all got it for him for his birthday/father's day.
I got my wedding dress back this weekend. I really like how it's fitting now. I definitely need to plan time to get into it the day of the wedding. Apparently with corset dresses you have to slowly cinch them in. She said about three intervals should be enough. I absolutely love the changes that I asked her to make in the dress. I'm really excited about wearing it on my wedding day. I'm also excited about getting a little bit closer to my goal weight before the wedding.
Redcrosse is coming into town this upcoming weekend and I'm really excited for that. He's so sweet and generous with his time. The weekend after he's flying in for a FOUR DAY WEEKEND. YES!
The wedding is getting closer and closer. After the 20th I'm going to order the tables, start on the centerpieces, order the menu for everyone, talk about cake design with the chef at Christopher place, get my sister's input on the baker for the groom's cake and try not to go cray cray. We'll see.
I'm excited about this week. I hope it goes well on all counts.
