A hearty and flavorful beef stew cooked slowly in a crockpot, resulting in tender meat and vegetables in a rich broth.
Ingredients: 2 lbs beef stew meat, cubed. 4 large carrots, sliced. 3 medium potatoes, diced. 1 onion, chopped. 2 cloves garlic, minced. 1 can 14.5 oz diced tomatoes. 4 cups beef broth. 1/4 cup all-purpose flour. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste.
Instructions: In a bowl, toss beef cubes with flour until coated. Place coated beef, carrots, potatoes, onion, and garlic into the slow cooker. Add diced tomatoes, beef broth, thyme, rosemary, salt, and pepper. Stir to combine. Cover and cook on low for 8 hours or on high for 4 hours, until beef is tender and vegetables are cooked through. Serve hot, garnished with fresh herbs if desired.
