Ingredients: 2 cups sliced zucchini. 1/2 pound large shrimp, peeled and deveined. 2 cloves garlic, minced. 1 tablespoon ginger, minced. 2 tablespoons soy sauce. 1 tablespoon oyster sauce. 1 tablespoon vegetable oil. 1/4 teaspoon red pepper flakes. Salt and pepper to taste. 2 green onions, chopped. Cooked rice for serving.
Instructions: In a bowl, combine soy sauce, oyster sauce, and red pepper flakes. Set aside. Heat vegetable oil in a large pan or wok over high heat. Add minced garlic and ginger. Stir-fry for 30 seconds until fragrant. Add sliced zucchini and stir-fry for 2-3 minutes until they start to soften. Push the zucchini to one side of the pan and add shrimp to the other side. Cook shrimp for 2-3 minutes on each side until they turn pink and opaque. Pour the sauce mixture over the shrimp and zucchini. Stir to coat everything evenly. Season with salt and pepper to taste.
