I've come to really enjoy #tachiuo (or beltfish) living in Hiroshima. It's not a fish I had encountered much before, but since it's abundant in this region, you see it on menus around the city. If you've never seen one of these, they're long silvery slightly flat fish with an angry facial expression. I've enjoyed them raw as sashimi, or grilled over charcoal, but my favorite is the best of both worlds, either blowtorched or 30 seconds over hot charcoal to crisp up the skin, but mostly rare inside.
