Tekkamaki breakfast! I scrambled to finish eating before the family Zoom because my dad loooves sushi but can’t have it. Then it turned out he only wanted to sit just off-camera and shout occasional puns that no one could hear (dads gotta dad!) so my sushi wouldn’t have hurt anyone.
山芋としその鉄火巻き // Tekkamaki with Mountain Yam & Shiso I’m not a huge fan of mountain yam–it’s a lot like biting into a slimy radish–but I like it better with tuna than grated into slime (like this). It gives the roll a nice crispness, and the shiso is super refreshing.
黒米鉄火巻き // Black Rice Tekkamaki The black rice has a sweetness that really makes the tuna taste wonderful. Also, I fell deeply in love with the Fujisan-shaped soy sauce dish.
