hello ms najia, im aware you don't have a cooking blog, however, hypothetically if you wanted to make veggie kusa ma7shi / stuffed courgettes what would you replace the minced meat with...<.<
This kusa ma7shi recipe that... somebody... wrote uses a filling of rice and commercially produced vegetarian mince. you could use Gardein plant-based ground beef, Impossible, Beyond, Quorn, whatever you can find at a store near you.
TVP (textured vegetable protein) is also a very good option. you can hydrate it in some spiced vegetable broth with a dash of soy sauce and then use it 1:1 in any recipe that calls for ground meat. it's defatted protein, though, so you'll need to add oil if you're going to fry it. you can get TVP at an Asian grocery store or from Bob's Red Mill.
if you don't want to use meat substitutes, I would use a vegetable that will hold its shape and cook about as quickly as the rice cooks. some diced sweet potato and/or minced carrot might be good.
