X + Y Baked Eggs for Breakfast or Snack

You’ve probably heard me mention this before: our staple breakfast diet is oatmeal but Dozer and Baby Dino are getting bored of it. Baby Dino, especially, is a picky eater so I recently started my personal #gltbreakfastchallenge which is really just me making different things for breakfast to satisfy their Royal Highnesses at home.

This week, I tried out baking eggs in a muffin tray for the first time and it was so easy AND so popular among the kids that I think I’ll be recycling this breakfast recipe for awhile more. 

The reason why I decided to name this recipe X + Y Baked Eggs, is because it consists of 2 main groups of ingredients. 

Group X: Can be anything which you want as the filling in your eggs. I used bacon (chopped into little squares), diced capsicum, garlic and some cheddar cheese. 

Group Y: Eggs, always eggs. 

This recipe is pretty much only 2 steps:

STEP 1: Mix up all the fillings and distribute them into your muffin tray.

STEP 2: Whisk a couple of eggs with salt and pepper, then pour them into your muffin tray, until it just about covers each filling. Bake at 180 degrees Celsius for about 18 - 20 minutes. 

Tips: 

1. There is no real measurement. You can put as much bacon or as much capsicum as you like. Start off with about 3 eggs and add more if not enough. 

2. I lightly sauteed my fillings over the stove before distributing them into the muffin tray, but if it were just capsicum, you can skip this step. 

3. Don’t overbake else your baked eggs will turn out dry. 

4. You can put anything you like in the fillings. Minced meat, corn, mixed vegetables...

5. It helps to butter the muffin tray first so the eggs can be easily removed.

These X + Y Baked Eggs are so versatile! You can have them for breakfast or afternoon tea. You can also make a whole batch and refrigerate them. You could also mash them up as sandwich fillings! Yes, you’re welcome!
