A simple, tasty, and filling Tuscan white bean soup that is easy to make in a slow cooker. Great for a tasty and comforting meal!
Ingredients: 2 cans 15 oz each cannellini beans, drained and rinsed. 1 onion, finely chopped. 3 carrots, peeled and sliced. 3 celery stalks, chopped. 4 cloves garlic, minced. 1 teaspoon dried rosemary. 1 teaspoon dried thyme. 1 bay leaf. 6 cups vegetable broth. 1 can 14 oz diced tomatoes, undrained. 2 cups kale, chopped. Salt and pepper to taste. Grated Parmesan for serving.
Instructions: Put the cannellini beans, onion, carrots, celery, garlic, rosemary, thyme, and bay leaf in a slow cooker. Over the things in the slow cooker, add vegetable broth and diced tomatoes with juice. Cover, stir well, and cook on low for 6 to 8 hours, or until the vegetables are soft. Add chopped kale to the slow cooker about 30 minutes before you want to serve. Use a stir to mix. Add pepper and salt to taste. Throw away the bay leaf. Add grated Parmesan on top and serve hot.
