Notes: Have you ever stopped at a random food court on a road trip and discovered a new favorite Vada Pao joint? I did. We stopped by for a quick breakfast halt and I spotted an authentic Maharashtrian food stall. The vada was piping hot, had the subtle potato and curry flavors that mark a true-blue vada pao from its aping cousins. The fried chili was thick and perfect for a spice kick, and that sukha chutney was the best garlic-chili powder combination. One bite into the vada and I already knew I had lost my heart. ❤

Freshly made vadas and samosas are put on the counter for sale. Vadas and Samosas are fried snacks that are extremely popular here in Mumbai. They can be consumed as it is, or can be put between buns with chutney - called vada pav and samosa pav respectively. They're delicious, and cost only Rs.5-Rs.8 (thats about $0.16)! =)
