Taco Bell’s Doritos Locos Taco is a wonderful invention that I have never tried. It looks fantastic. Taco Bell is fantastic. Doritos are fantastic. Together, I hope they are fantastic, because I am going to try to make them at home today.
Ground Beef Recipe

Ingredients:
1 medium head of cauliflower (just the florets)
2 cups raw walnuts
2 cloves of garlic
2 tablespoons olive oil
2 tablespoons soy sauce
2 teaspoons liquid smoke
1/2 teaspoon salt
2 teaspoons Mexican/taco seasoning (Mrs. Dash Southwest Chipotle Seasoning Blend)
Directions:
Preheat the oven to 350 degrees and spray a baking sheet with non-stick cooking spray.
Place the cauliflower, walnuts, and garlic in the food processor and blend. Depending on the grain you like determines how long you should blend.
Pour the cauliflower mixture into a large bowl and stir in the olive oil, soy sauce, liquid smoke, salt, and Mexican/taco seasoning. Stir until you can no longer find unseasoned whit clumps of cauliflower.
Spread the mixture onto the baking sheet in an even layer.
Bake for 45 minutes to 1 hour, returning every 15 minutes to stir and redistribute.
The ground beef is done baking when it is dry, browned, and forms separate clusters.
Nacho Cheese Sauce Recipe

Ingredients:
1 1/4 cup unsweetened almond milk
1/2 cup nutritional yeast
Juice of half a lemon
2 tablespoon cornstarch
1 tablespoon tahini
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 teaspoon Mexican/taco seasoning (Mrs. Dash Southwest Chipotle Seasoning Blend)
1/8 teaspoon salt
Directions:
Whisk all the ingredients together in a saucepan.
Place the saucepan over high heat and bring to a boil.
Continue to whisk, reduce the heat to low, and allow the mixture to simmer until it thickens.
Serve warm.
Doritos Taco Shell

Ingredients:
3 Taco Size Corn Tortillas
2 tablespoons olive oil
3 tablespoons of nutritional yeast
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1/4 teaspoon salt
2 teaspoon taco seasoning
Direction:
Preheat the oven to 350 degrees F.
Brush olive oil on both sides of the corn tortillas.
Add the remaining ingredients to a bowl and stir with a fork.
Sprinkle the mixture onto one side of the tortilla.
Drape the tortilla, seasoned side up over to bars directly on the oven rack.
Bake for ten minutes, then carefully remove.
Assembly: Fill the baked corn, cool ranch, tortilla shell with cauliflower ground beef, sour cream, lettuce, diced tomato, and nacho cheese sauce. ENJOY!
About The Take-Out Diet: I Love Dining-In, Taking-Out, and Driving-Thru. Since it is physically, mentally, and financially impossible for me to do that everyday, I bought a fryolator.
