Catie’s Quick Keto Banana Nut “Bread”
Ingredients:
-2 tbsp almond flour
-1 tbsp psyllium husk
-2 tbsp butter
-1 egg
-1/2 tsp baking powder
-3 tbsp stevia
-1.5 tsp banana extract
- .5 tsp vanilla extract
-1/4 cup crushed walnuts (optional, of course)
Mix all dry ingredients in microwave safe container.
Melt butter and add to dry ingredients.
Mix in egg and stir until combined.
Microwave for 90 seconds.
Add whipped cream and enjoy!

Total time: 3 mins Makes: 1 roll
Ingredients
1 tablespoon butter
¼ teaspoon Pink Himalayan salt
1 large egg
1 tablespoon coconut flour
¼ teaspoon baking powder
Instructions
In a small microwave safe bowl, melt your butter in the microwave.
Allow the melted butter to slightly cool, then mix in the rest of the ingredients until smooth.
Microwave the mixture on high for 90 seconds. Bread will poof up while “baking,” then slightly deflate. When done, it will look like a muffin. Make sure it appears set, otherwise microwave 10-20 more seconds (but 90 seconds should be enough, and overcooking can dry it up).
Gently, with a knife, loosen the bread edges and remove from the bowl onto a plate.
Slice the bread crosswise into two slices and make a guilt free sandwich!

Servings: 4 Calories: 263 kcal INGREDIENTS:
½ teaspoon Pink Himalayan salt
1 large head cauliflower, cut into bite-size pieces
1 cup heavy cream
2 ounces cream cheese
2 teaspoons Dijon mustard
2 cups shredded sharp cheddar, divided (reserve ½ cup for topping)
¼ teaspoon black pepper
1/8 teaspoon garlic powder
Instructions:
Preheat your oven to 375 degrees F.
Bring a large pot of water to a boil. Put some salt in the water.
Spray an 8x8 baking dish with vegetable oil spray. (I use my green bean casserole dish for perfection!)
Cook the cauliflower in the boiling water for about 5 mins. Drain. Transfer cauliflower to the baking dish and set aside.
Bring the cream to a simmer in a small saucepan, & whisk in the cream cheese & mustard until a smooth consistency. Stir in 1.5 cups of the cheese, plus the salt, pepper, and garlic and mix until the cheese melts (about 1 - 2 minutes.)
Remove from heat, pour over the cauliflower, and stir together.
Top with the remaining ½ cup cheese and bake until browned and bubbly, about 15 minutes.
Allow to cool about 5 minutes then serve.
